Fried Rabbit smothered in Roux. In the style of Dixie.

Here is a outstanding rabbit/squirrel recipe for all you hunters and wild hippies out there. Either meat works equally well. The trick is the finish in the pressure cooker to drive the roux or brown gravy into the meat. It's simply phenomenal. 

Rabbit:
Clean throughly and remove all fat and skin. 
Cut up into 6 pieces. I prefer 8. 
Wash the pieces throughly in cold water. 
Pat dry.

Dirctions:
Salt and pepper the rabbit pieces well. 
Coat in flour. 
Brown the rabbit in 365 degree oil. You don't want to completely cook it. Just brown it. It will finish cooking in the pressure cooker. While browning the rabbit, throw some diced onion in the hot oil as well. The onion goes in the PC along with the rabbit. 
Transfer the rabbit to the pressure cooker. Add roux or brown gravy (they work equally well), and onions to the pressure cooker. 
Cook at 12 PSI under pressure for 35 minutes. 45 minutes for a wild rabbit or hare. 
If you cook at 15 PSI, simply reduce the above times by 4-6 minutes. 

Tip: If you use roux instead of brown gravy, add 1 cup of water to the pot as well. Why? Roux alone is to thick to build steam without scorching. The water will solve this dilemma. 

Rabbit.

Cut into pieces.

Seasoned and coated with flour. 

Browning.



The end result after pressure cooking. 

Hope that y'all enjoy this recipe my friends. If you like rabbit and/or squirrel, give this a try. It is spectacular to say the least. The meat is so tender that you can almost drink it.

    My pleasure brother. As far as the pressure cooker, check out Amazon, Woot, Walmart and Kohls. One of the four always has a good deal on one of the electric pressure cookers. Heck even QVC and HSN runs some spectacular deals at times.

    I have a couple more Cajun style rabbit recipes that I'm going to post in the next few days. One is a true rabbit gumbo and the other is a brown gravy (not roux) recipe. Both are quite good of you like Cajun style food my friend.

    Scottie, I haven't had rabbit (stew) since I was a teen and can't remember its texture or flavor. Does your cooking process yield tender rabbit?  Thanks.

    If you use the pressure cooker (I did) instead of a pot or slow cooker, you can make the meat so tender that you can drink it. No kidding.

    I love rabbit and will be hunting some up with my father-in-law next week.  Perfect timing since I have a pressure cooker thats gone unused so far.  May just have to give this one a try.

    And for you health nuts and paleo people, rabbit is higher in protein and lower in fat than beef or chicken!

    I grew up out in the country and there were several places a guy could go to buy rabbits for a very low price - if you don't hunt, you will do well to find rabbits for under $10/lb.

    I suppose a guy could get all he wants for free or close to it in the pet section of Craigslist?  I kid, I kid.

    Looks great @SGH!  My neighborhood is infested with those critters.  Always a pain trying to keep them outta the garden.  May hafta warn them this spring with the pressure cooker.  ;)

    One great thing about the pressure cooker is the ability to alter or change what things taste like. With a little practice, you can make a turd taste like cotton candy. With the PC, you can totally remove the wild or gamey taste from meat. The rabbit that I fried and then pressure cooked in the roux had no wild taste at all. Matter of fact, most people would believe that it was chicken if I would have told them that is was chicken.
