I couldn't find the Nesco locally, but found LEM's and got the hickory and the hot. I'm going to try the ground meat method @SGH posted with some 96% lean beef and some 90% ground bison. If it doesn't turn out well, I'll get some brisket flat or eye round tomorrow.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

I ordered the gun too.Zmokin said:If texture is a problem, i recommend grinding the meat and using a nesco gun to press the meat into strips. Much easier to chew than sliced beef. -

I mixed up the seasoning/cure per the instructions, let it sit in the fridge overnight and then rolled it out into 1/8" roundish pieces and smoked low for a while on the egg and then finished them on the dehydrator. Turned out great, not the most tender but I was able to send the boys off on a pack trip with plenty of jerky. Using lean ground meat was super easy.
