First Reverse Sear

First reverse sear went perfectly!!!! I loved it but the woman said she preferred a "normal" grilled steak...
I'll definitely be doing this again regardless!

Excellent cook! What didn't she like? If she likes more crust reverse sear in CI. Also, try caveman. Anyways, looks great to me!Sandy Springs & Dawsonville Ga

She said it was too "chewy".... even though when I cook her steak normally she eats it medium to medium rare??
I'm going to do here's more of a well done next time instead of medium rare and see how she likes that. I believe she's just afraid of change
I can't handle a well done steak.... it ruins the entire flavore of the steak for me. -

I'll take hers - looks Ok to me. If you can, drive the probe in from the side of the steak, parallel to the top and bottom, easier to get the middle of the steak. The best approach is to use a handheld rather than a probe, a Thermapen or 600c/thermapop....The CI pan is a great way to RS, you can use the skillet as the setter - it will be smoking hot when the slow roast is done....Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
