We've been busy, busy, busy cooking all day today but would say it was a successful day on the smoker. We did a small, 10lb, turkey for dinner and have a nice, fresh-off-the-farm brisket on there as we speak. This is our second attempt at a brisket so keep your fingers crossed we have a better showing than the first go 'round.
The turkey was a huge hit! I brined all night and smoked in Mad Max fashion. I used some apples, carrots, celery, onions, fresh rosemary, thyme and sage in the cavity and added that to a drip pan with apple cider and chicken stock. I also made a herb butter and rubbed it on down. We smoked it for about 4 hours on 325ish, raised indirect on my roasting rack. It was amazing!!!
The brisket is on now but I injected with apple juice. See the pic - the benefits of working in the ER is i get disposable "injectors." It has been on for about 4 hours now and we just wrapped it in foil. The Man is managing this one so I'm sure it will be perfect! We are taking it to another family celebration tomorrow and they've been asking for something off the Egg. I will make my brisket sauce tomorrow - beer, apple cider vinegar, worchestershire, s/p, some rub and garlic. So good!
Merry Christmas, Y'all!

Nice looking turkey. I'm sure it was delicious.
Any road will take you there if you don't know where you're going.

That's some great holiday fare right there.

Most eggcellent.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
