Ok so we had a menu change and are now having prime rib. How many bones for 10 people?  Thanks

Four is a squeeze, five is plenty.

I prefer to trim heavily, take off the ribs and tie it.  I roast the ribs separately and make stock, and use the meat trimmings and rib trimmings for hash with eggs (not a bad way to start the day).

If you have a good source chances are they will separate the bones and then tie them back.  Regardless, I remove the bones and cook them separately as a post-roast knawing banquet.  Easier to get a more uniform shape to the roast for the cook.  FWIW-

You need to figure about 10 - 11 ounce per person precook weight. This assumes you will have equal number of king and queen cuts.....on a bone in rib roast. I save the bones for a later meal myself......but sometimes you just have to gnaw. Anyway, you need about a 7 ponder which will likely put you in the five bone area.

Go big and enjoy the leftovers.  7 bones.

7 bones will feed 18+ people.  Assume 3/4# per person, as its bone in and you'll have good leftovers.

That's a pretty good rule of thumb. I would not decide on the number or ribs but on the weight. When in doubt go on the larger size and take home the leftovers.
