Position of Plate Setter

when cooking a couple of chicken breasts with indirect heat which is best position of plate setter-- legs up or down?

    Legs up with cooking grid sitting on the legs.  

    Location- Just "this side" of Biloxi, Ms.

    ^^^^^^^ what the newbie said!  Drip pan with spacers beneath for airflow on the plate setter.  And welcome aboard!  Don't ask @SGH about pork ;)

    For clarity, when cooking meat indirect with the plate setter and cooking grid, there is never a viable reason for going legs down in my opinion. Legs down is more for pizza, pastries, breads and some pot or dish setups. Here is another thing to consider. When using the setter in the legs down position, it directs the majority of the flue directly at the gasket. As such, the gasket takes a real beating from the hot flue when the legs are turned down. This is of little concern if you have installed a Rutland or Coltronics style gasket or are running gasket less. However the factory gasket will usually fail pretty quick if you are running real high temps with the plate setter turned legs down. Just some info I thought that I would share my friend.

    Don't ever trust the part about @SGH offering good advice.  Pretty sure he photo shopped the hanging hogs and cured hams.  Pretty sure he's blowing smoke like stike.  Also pretty sure he's my friend =)

  • Thanks SGH for the detailed information. Another Question,  I've read about reverse searing. How do you remove the hot place setter without burning your hand off. I have the thermal resistant gloves

    @Buckbill- Welcome aboard and enjoy the journey. 
    Regarding the hot platesetter-make sure you have the landing zone already targeted and then I go with heat resistant gloves.  Just be expeditious.

    Have the landing pad close and make sure the path is clear. I use welding gloves and even with them, I have to move fast. The plate setter gets ludicrously hot.

  • I will be cooking a boneless rib roast for Christmas. My wife and daughter like med well the other six are meat lovers and want med rare. Any suggestions on how to make both sides happy?

    Cut it in half creating two shorter loins so you can pull one half before the other. There are other ways, but that is the simplest way.

    Serve your wife and daughter the end cuts they will be cooked more than the center.
