Question on baby back ribs

Hi all,


I am planning on doing some baby back ribs for xmas this year and had a dilemma.  I can only fit two racks on the egg at once so would have to do two runs to do 3 or 4 racks.  Any thoughts on other ideas to save time?

    It sounds like you are lying them flat during the cook.  You could build a 2nd level grate and do twice as many at once. Or use a rib rack and stand them on their side.  You can also wrap them in foil and FTC them in towels and they will stay warm in a cooler.

    Cook them standing on edge, or stack them crosswise, like Tic Tac Toe..

    If on edge, you can use a vertical rack, or use skewers between the slabs. Just enough space between the slab (sections) to let air circulate. They will need to be turned over at least once so the bottom edge doesn't burn..

    Stacked, expect more work flipping and rearranging. Where the slabs touch, they will cook slower.

    Alternatively, cook ahead, brush w. butter or oil when almost done, about 180F internal, and seal in ziplocs. Freeze or refridge. To finish, place bags in hot water. Remove from bags, Egg till at least 185F, and serve basted in steaming sauce. Not quite as good as straight from Egg during 1st cook, but acceptable.

    Stand them on their sides, run a metal skewer thru them. Make small balls with HDAF and put on skewers between the ribs (so they can breathe). I did this recently and was able to fit 6 racks of ribs on my lg.

    What works for me is to cut each rack in half and then stand them vertically. I have never understood the reluctance to cut any rack of ribs in half.

    the trick would not be 3 racks, it would be 40 racks =) get a rib rack or vee style roasting rack used upsidedown at homedepot

    Might be, but we don't have any platters in our cabinets to serve each guest a whole rack!

    Six racks of ribs just after I pulled them. Forgot to take a picture in the egg - but you get the idea. Note the HDAF ball's in between each rack that are held in place with skewers.
