Short ribs and mashed potatoes
A couple shots of tonight's dinner. Slow roasted short ribs with some mashed potatoes. Nicely marbled short ribs about 1.5" thick

Great cook right there. Beef ribs beat their pork cousins every time.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

The concept is the same as any kamado.
This cooker need less air flow for cooking since all the air that enters the bottom vent can only go through the charcoal. The fire box has no holes on the sides and it fits tight against the walls of kamado.
The walls of the KK are refractory cement and are insulated, so it hold heat very well and controls temp easily.
My size KK 23" with the grids which are 3/8" thick 304 stainless steel weights over 560lbs. There is alot of mass to heat up so it takes a bit longer to heat soak. -
