Bones from yesterday and a couple of months of chicken bones.
I'll squeeze a couple onions, some carrots and celery in and boil for a few hours.
Then some home-canning for storage.

I try to keep my bones inside my skin and preferably intact.

Mine go into a crock pot with onions and celery and other goodness, overnight. Then I strain it all and freeze it. Thumbs up on the canning.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

I found out years ago that if I place the bones and other veggies in a nylon fishing bag from Wally World around $5, after all the cooking time, 5 hours- did a 22#'er for stock yesterday, got 4 gallons. When the cooking is over I remove the bag with the bones and veggies and set aside to cool (snack for the coons) let the pot cool and freeze in quart chinese soup containers the straining is much easier.

Turkey into stock. Ham into butter beans.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Hacked up the turkey bones and carcass for stock and soup -- just got it going now. Will portion some stock into 2 cup ziplocks and freeze for recipe use and make soup with the rest.It's a 302 thing . . . -
My wife usually makes turkey-barley-okra soup, unfortunately we've found the carcass of a fried turkey is horrible for soup or anything else, so we just toss those now.

Just butchered a couple of ducks. Roasted the carcasses, thighs and legs with mirepoix and painted with tomato paste. Making duck phở tonight
