Salmon Patties,Slaw and Egg'd Hush Puppies.

Started out with a Salmon filet on the mini.
imagejpeg

Then I mixed up some fresh slaw while the veggies for the patties were getting happy in the sautée pan. No pics of this stage. Sorry

Next up I mixed up the baked hush puppies mix. More like cornbread and on the small @ 425 indirect

Meanwhile the CI was all warmed up on the large just waiting for the patties

And plated up. Patties were really good, slaw was really good and hush puppies were so so.

Thanks for looking.

@Mattman3969  Salmon, one of my very favorites. And on the mini to boot. Never tried baked Hush Puppies my friend, I have always deep fried them. Interesting for sure. Everything looks spectacular. The pics looks great as well. Awesome cook brother.

@Mattman3969  I got to ask, how do the baked HP's compare to deep fried?

So it's like a crab cake with salmon?  Great idea

@Mattman3969 , nice looking cook.  Interesting you posted this as I have been craving salmon patties lately.  The salmon patties I am used to aren't anything like these though, however I do miss those Mom cooked.

I like a salmon patty as much as a crab cake. A little sriracha mayo sauce tastes great with them.

I'm impressed you found a diamond version of your famous square plate!

Not close enough for me.  These had more of a cornbread texture. Will do something different next time.

BTW - the mini is turning into the king cooker around here. Love the little guy!

For some things, deep fried is a tough act to follow my friend.

      Very similar to crab cakes.

If you like Hushpuppies, the next time you make them, stuff a few of them with cheddar cheese and jalapeños and deep fry. It's one of our favorite ways to make them. The cheese and peppers gives them that little extra something.

Thanks @sgh    These had onion & jalapeños mixed in.  The flavor was great but the texture was dry.  Like you said somethings you just don't mess with.

Now that  I think about what you just said the cheese may add what I was missing from a moisture standpoint.

    • Salmon patties I'm accustomed to come from a can o' salmon. Way better.

That was moms salmon patties. Lol.  The bigger chunks of fresh salmon make a huge textural difference.
