Turkey Trial Run

After seeing all of the amazing Egged Turkeys on here over the past year, I decided to try a Spatchcock Turkey with @Mickey coffee rub.  Before applying the rub I let the Turkey air dry in the fridge...which I think helped the skin crisp up. 

I cooked the 10 pound turkey raised direct at 400 for 1 hour and it was done. I couldn't believe the temp so I checked again in 10 minutes and obviously overshot my target. Lesson...trust the thermapen.  However, it was still very moist and I enjoyed the rub. I vacuum sealed probably enough rub for 5 turkeys :).

This sure beats waiting around for a turkey to finish in the oven. 

One other thing...tin snips work very well on cutting through the backbone.
