Tacos al pastor & chili verde

Smoked a 7lb butt, pulled off the egg at 170 IT.
Let it rest for 20 min
Cut into 3/4" cubes
Put half of it into CI skillet with Adobe sauce, back on the egg at 250 for two more hours, for tacos al pastor.
The other half went into sauce pan with chile verde sauce for burritos later this week. Pics were from phone so quality not that good.
Tacos served with @nolaegghead au gratin potatoes. They were awesome!

I have not yet. Being from Central Valley of Cali, hard to find good fresh fish. What fish do you recomend?SGH said:

I grew up in California and had a Mexican babysitter who used to make refried beans and tortillas fresh weekly.. and I work in areas with predominantly Mexican food. Good times.

Being from the gulf coast we have a pretty good variety of fish that work well for tacos. Fresh catfish (not store bought) caught from Dog and Pascagoula river are excellent. Some of my favorite saltwater varietys include grouper, redfish, ground mullet, popeye mullet and mahi mahi. All make excellent tacos when fresh.jabam said:I have not yet. Making me hungry... can't go wrong with Mexican. Recently made Carnitas with some of the pork butt made last weekend.
