Stuffed Chicken Breasts.
For tonight's dinner I cooked some stuffed chicken breasts. For the stuffing I used some chopped mushrooms, onion, garlic and sun dried tomatoes. I cooked the mixture with some white wine.
The breasts were flattened then I added some ham, montaray jack spicy cheese and the mushroom mixture rolled and tied.
I sliced some potatoes hassleback style to cook with the chicken. I cooked indirect at 375f. The potatoes took about an hour and the chicken took about 40 minutes.
All cooked and ready to plate

Those breast look great you pound them out then stuff them?

@Lit thats right. I fillet them in the middle then pounded flat. I put the ham down first to to help keep the stuffing in roll and tie. I tie snug in the middle and very tight on the two ends.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@Tinyfish That is some mighty fine looking grub. Perfectly put together.
Nothing I cook looks nearly that healthy. I'm gonna get some shiny spray paint and see if that helps.
