Slight OT: Pancetta done

set aside part of the belly I made bacon out of a few weeks ago to give pancetta a try.  3 weeks later, here is the result.  I think it came out pretty stellar.

    My head is spinning like a hippies in a wind storm. Spectacular looking my friend. And for the record and clarity, Pancetta is not off topic. Far from it in fact.
