Beef tacos
Just saw the barbacoa beef taco recipe that @The Cen-Tex Smoker posted and had to give it a go. Used some southwest style rubs, oak and pecan for smoke. In the early stage right now.

Finished product. It was very good, tons of flavor. Turned out pretty spicy though because the Mrs. decided to pick up some dried ghost peppers to put in with the pepper mixture. We also made fresh corn tortillas for the first time. Tacos were topped avacado, pickled onions, radish, cilantro, and queso fresco. Paired the tacos with homemade rice, Mexican black beans, and sweet corn cake. Also had some fresh guac and chips. Washed it all down with some margaritas.
@pgprescott No, I'm not sure what you would call it, maybe a spicy Mexican chili sauce? I got it from @The Cen-Tex Smoker Barbacoa recipe. I would definitely recommend giving it a try.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Thanks @eggsurance_agent @SciAggie and @pgprescott ! It was an all day cooking event (other than breaks to watch some football), but worth the outcome. We both enjoy cooking, so it made for a fun Sunday. We also finished the Mexican feast with a tres leches cake.
