My father has a whole mess of shark steaks he wants me to cook on the egg. I've never made shark before. Any tips, tricks, suggestions? Just treat it like any old fish?

    This.

Cook more than tuna if you like your tuna rare.

    What at kind of shark?
If mako or young thresher, you are good to go.  If an older thresher, may want to soak in milk for a few hours.

A little bit of herb compound butter on top of a finished shark steak is great.

The best advice I ever got on cooking shark was to tell me to think of it like a pork chop.  If you hit it just right it is wonderful.  If you overcook it, it gets rubbery very fast.  Think medium but no more.

  • @Foghorn what temp is medium? I cook pork to 140 usually, same temp?

Yes.  140-145. At 150 they get rubbery.
