    @feef706 I will likely get a controller as this obsession and this forum takes more control of where I decide to throw my money.

    I held the brisket I mentioned previously for 6 hours and it did not require any warm up before we decided to sit down and eat.

    Anyway, I am sure your brisket will slice up nice as it was already looking mighty tasty. A good looking first brisket so far.

    Too late for today but here's a thread I started with a FTC process that works for a long time:
    Foil Towels and Cooler (FTC) for extended duration YMMV-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Thank you sir, I love the reference to the cow, that's kinda where I'm at, Brisket is going to be lunch rather than dinner, oh well.

    Sliced her up around 2, 5 hours after coming off the grill, was still very warm.

    I think I did ok for my first try, it was fairly moist and very tender in the flat. I haven't cut the point as the flat yielded enough for the crowd. Had a pretty nice smoke ring also.

    As you said, nice smoke ring-and you need to grab some of the point right now.  That hunk is the reason for wrestling with that friggin cow.  You will thank me later. :)  Great cook BTW.
