O/T got the call....

From the meat locker. Freind brought in the boffalo. Yep getting a half of it....can we say yum or what. While on the phone they put it down so in about 2 weeks fresh bison meat.

Oh yeah, will ne searching bison burgers off the food truck very soon! (Yeah cheap plug there...lol)

    Truck is doing just ok right now. After we opened 3 other BBQ places have opened in town. I have tried 2 of them and not to pat myself on the back but mine IS better.

    And yeah going to try the bison burger on the truck. There is NO where around us serving them. Bad part is the price. Yeah going to have to be 9.00 but damn they are good.

    I'm pretty sure @SGH will be saddened to learn the fate of one of his sacred buffalos.  ;)  I'm sure he will recover in time for brisket camp, however.

    I have had bison/beef mix burgers several times and they were excellent. Do not know the mix % but the cook said it did not dry out as much as pure bison and the taste was still good. You might want to try that to keep price more reasonable.

    It can dry out if it is left on to long. Almost want it med. to med/rare

    @RRP they are only taking contract corn till next week...then hold on they are going to open it up. So hope they are hungry. I have been having a few medical issues so it has been hit and miss on being open with ALOT of DR. Appointments. Hoping to get better soon to be open when the trucks are there. We will be there tomorrow morning as the line is closed today.

    What's the market there besides 3 other Q trucks?  If yours is better and reasonably priced you should have no issue. If the Bison becomes a hit can you get more to keep up with demand?  Don't divulge trade secrets :wink:

    He said "places" not "trucks". My guess is his reputation amongst the incoming grain hauling truckers will spread, plus his ability to move his truck closer to the river terminal where they have to wait in line. 
    BTW Larry...dig out your old CB and Welcome those truckers to your portable truck-em-up stop! LOL You'll need BRINKS to haul your income to the bank!!!

    To answer a few questions. 

    Yes es I can keep a regular supply of bison. Have a friend who raises them, so that should not be a issue.

    @NPHuskerFL it is 3 brick and mortar that opened. 2 are already in trouble and the 3rd is a famous Daves rip off, the 3rd is the only one that kind of worries me as the owners have millions backing them. And yes even my employees don't know the rubs or sauce recipes. Amazing how people will just walk up order and flat out ask for the secrets. Then I come off as a a$$ when I tell them it's a secret.

    @pgprescott thanks Pete. Yeah hoping to get these medical issues resolved real soon.

    @ RRP already have the CB in there...lol old habits are hard to kill. The corn line is what is going to save us over the winter I think. The times we have been there they are very supportive of the truck. I'm thinking the bison will be a big hit with them as well. Just had some bison burgers last night. Dang they are good...lol

    Respect. Yep, even at my lil demos folks would ask for things and hopefully I didn't come off as a prick but, I'd usually just speak in generalities. A few wanted me to write it down and that ain't happening. Curious does your state require you to have a commissary or can you do any of it from home?

    @NPHuskerFL yes. The truck IS my commissary. It is a full kitchen. We are allowed to cook off the truck with a outside smoker, grill, or fryer. We do have a fryer in the truck, but I have yet to use it.

    Funny story here. I was working the truck by myself as my employee had to run and pick his kids up from school when I had a woman ask. "What is the difference between the pulled pork sandwich and the brisket sandwich?" My response "One is a pig the other is a cow". She just turned away and left. This is why I have employees so I don't have to deal with customer "service". Anyone who knows me knows I'm not the most pleased person to be around when you ask a stupid question, but I am really trying to work on that.

    this is why I enjoy working this corn line for the truck drivers. I relate really good with them and the biker crowd. Even family fairs and events I let my employees tale to the coustomer and I just cook.

    You should look into Shirley Fab. You can't spend 14 thousand on one of their trailers and you can get all the capacity you need.  I quoted a 30x75 with 3 30x65 racks (reverse flow so 10" goes to making the turn after the baffle), and warmer/side smoker has another 4 26x26 racks. A sink/ 20gal water storage / tankless heater, insulated firebox, extra storage (with a ramp to wheel up something the size of a Pitmaker Vault), and 2 high btu propane burners, custom paint to match my RV and it all clocked in at $12k.  

    (I've scaled my order back a pretty good bit)

    You stayin' with PC?  Looking real hard at the Backyard Model.  Plenty big for my uses/needs.  Although a hitched pit would be nice.  No room after the camper.  Guess I could park it in my front yard. lol

    @focker Brandon that was the plan was to get another meat monster, but the MMOF. I have the MMIF already that I love. You are more then welcome to make the trip to Clinton to see it if you like. Let us know bring the family and I will cook something up for everyone.

    Appreciate the offer Larry!  Will most definitely keep this in mind and let you know ahead of time when we head out that way. 

    Is the MMOF more versatile than the MMIF?  Have watched the vids of the Quau guy Mike explain the MMOF.  Love how he holds meat in the lower chamber with the three stacks in the 160s,170s.  So true about what he says about the benefits of multiple cooking zones for competition, and not preferring one constant temp throughout the chamber.  And using the deflector plate on the brisket flat, with some direct heat for the point. 

    I have a  feeling, that sometime in the near future, I will be arranging an appt with the Dentist. My boy's teeth are growing straight fortunately, so this would be braces money would be well spent. hahaha

    Again, thanks and we'll come out maybe early Spring for a user demo.  B)

    @focker the MMOF has a offset firebox where the MMIF has the internal firebox. That Vidio is old as they no longer put the stack on the lid just two stacks on the side. Oh yeah the stainless steel stacks are a 1000.00 option, but damn I had to have them...lol.

    Really all you gain is even more cooking space due to the firebox not being inside the cooker is all. I have done a 80lbs hog in the monster so it is plenty big in its own regard.

    the base price is good. It's the options that kill you. I think I added like 4K to mine when I got it, but well worth the price for sure in my opinion.

    and yeah spring time is good as I will do a whole hog then for all my friends.

    I'm not a facebook member but you can still go and look at a lot of videos of the different cookers. The welds are 2nd to none and they are great guys. They are turning out some extremely impressive cookers.

    Damn, I hear ya buddy.  The options quickly add up when I watched the powerpoint on the Backyarder, like pneumatic tires, insulated firebox, etc.  

    Bill doesn't F around.  The quality is unsurpassed.

    @badinfluence  check out the BBQ brethren site for more info on what Shirley cookers are like. A real classy operation from what I have heard. There will be a wait , but the end result will likely be fabulous. 

    Buds in riverside processing your bison? I miss that place.
