Can't get any simpler method. Pinned up the tail to cook evenly. Cooked indirect at 400 for about 30 minutes. Dusted one with leftover pork butt rub and the other was naked until last 5 minutes when I basted it with homemade BBQ sauce. Pulled at 145, then onto wire rack for ten minutes. Sliced and plated up with some baked beans and almond poppy seed muffins. These are amazing!

That last picture says everything. Practically melting with all that moisture coming off it!
I like how pork prices have dropped within the last 3-6 months. I picked up a tenderloin from Sam's Club for under $15 last week. I cut it up into chops and vaccum sealed them. I have forgotten how rediculously good they are on the egg!
Your poppy seed muffins sound kick arse! A coworker brought in some homemade poppy seed bread last week and have been craving it since. Yours look real good"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

@WeberWho? Thanks, these were a double pack from Sam's for like $17. However the poppyseed muffins were Krutz Brand out of a book, boys and the wife said they were really good.
