I was having 20 people over for a post Christening dinner to celebrate my Granddaughter's Baptism. Last night I decided to put on a 9 pound Boston butt. I loaded up the XL with Rockwood and lit it at 10:30pm and got it stable at 11:00pm at 250 degrees. I was going to stay up to watch the news and SNL but fell asleep. I woke up at 5:15 am and ran out to the deck in a panic. I never even hooked up my Maverick. I lifted the lid and there sat my pork butt, , the dome temp was still 250 degrees and the internal temp was 132 degrees. I starting mopping it around 10 am and then again when I returned from church. At 1:30 I removed the platesetter and Boston butt.the internal temp was 192. I opened the vents and put in the cast iron grates. Within 5 minutes I was at 500 and did some burgers and dogs. Almost all the dogs and most of the burgers were left but he pork butt was devoured with coleslaw , BBQ sauce and Hawaiian rolls. Three observations. Eggs are awesome!, while I like Turbo butts, low and slow with a mop creates the best tasting pork and bark and lastly, the being able to convert from low and slow to cast owns high temp grilllng in 5 minutes is great!

You are correct on all 3 observations - plus don't forget the size of the XL. I did 23 burgers on mine yesterday.
XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle
