My Old Man's Ribs
I went nostalgic Sunday and decided to make some ribs the way my old man used to make them for the family. He typically made spareribs in his cooks, but I went with the baby backs that I had on hand. Marinated them overnight in his soy sauce and beer concoction that had bay leaf, garlic, black pepper, paprika, and crush red pepper flakes. It is a smell that can bring me back to countless backyard BBQs and picnics.
The ribs:
A view of both levels (the mess on the foil was not the problem, it was what built up on the fire ring):
Shoestring fries with rosemary and garlic:

Solid looking ribs. I like the fries too. We like baking straw fries with a quick broil at the end vs frying (both methods are tasty). Nice work.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

@rmercier and @Judy Mayberry, let me start by saying, like many recipe adaptations, there is no exact science. Here is my take on my father's work:
Ingredients:- 2 racks of spare ribs (baby backs work just as well)
- 2 cloves of garlic
- 1 bay leaf
- Soy Sauce (enough to have the ribs submerged)
- Black pepper to taste (I’d guess a tsp maybe two)
- Paprika to taste (I’d guess a tsp maybe two)
- Crushed red pepper flakes (a few shakes)
- ½ or the entire beer you just opened – for my old man, this was typically a Bud. For me, this could be an All Day IPA from Founder’s
If you give this a go, I would love to see your work.
