Pork Shoulder - when / how many chunks of wood for smoking

Afternoon all, getting ready for an overnight pork shoulder for pulled pork tomorrow. I think I have everything set for the most part, but wanted to know when you all put your smoke chunks on, tips/technique, how many, and if you add any during the loooong smoke... Thanks!!!

I use 5 or so good sized chunks of wood which is mixed in with my lump. Make sure to fill up to the bottom of the platesetter with you lump. On my XL I light it in one spot and let it come up to temp very slowly. to hold 250 it's only open about 2 credit cards thick on the bottom vent and maybe 1/2 a petal on the daisy wheel. Doing a bone in butt, 8.6 pounds if memory banks are working properly. I cleaned out my XL. Added lump, and mixed in 5, fist sized chunks of non hydrated (water soaked) chunks of peach, pecan, and something else.
typically I will use 5-6 chunks, fist sized, on very long, low and slows ( currently 225F pit, 17 hours plus ) turns out killer.

Perfect thanks! My butt (shoulder) is 8.75lbs I have the XL so advice is much appreciated. Thinking of starting it at 8pm tonight at 225 cook for a 2pm go time. Rather finish earlier and wrap in cooler than be late to bbq. Thoughts???Northern Jersey

You should be good and have plenty of time. If by chance it seems to be going slow toward the finish, you can bump the temp up to 300 or more with no ill effects at all. the smoke flavor is absorbed in the early stages of the cook.

I've found 260 to be my sweet spot for butts. Just as moist and better bark. 3-5 chunks mixed in lump. Enjoy!!
