The reason why you rinse cured meats is because there's an excessive amount of salt on the outside (needed to drive salt inside the meat). In this case, I salted like I would have if smoked, and the salt that would have been concentrated on the outside was diffused in the meat and juice.

@j_smith7 It's regular salt with 6.25% by weight sodium nitrite used for curing - bacon, ham, corned beef, etc. It also makes smoke rings.
