Margherita pizza(sorta) and Asian wings

Fired up the small at 250° with some white oak & cherry and threw on some wings for about 2 1/2hrs. The wings got glazed with an Asian hot sauce and back on the egg for the glaze to set up but I got no pics of that. 


While the wings were doing their thing I got the portobellos ready for the cook.  Cleaned out the brown gills the put a layer of marinara, one slice of fresh tomato and a slice of fresh moz. 


The shrooms went on the large at 450 indirect and raised. After 10 or so minutes I added the fresh basil


And plated up 


The shrooms were a definite winner and will most certainly be done again.  The wings are the same ones I always make when we have wings which is not to often.
