Working out of the home office and my wife has her night class tonight. Perfect day to smoke some spares!
Cooking at 250 grate on the XL.Post Oak and Hickory chunks
No plans to foil, may not even spritz.
I figure 6 hours?
These are the Hormel All Natural Packaged ribs, not the Foo Foo Duroc ribs I usually buy.

Looks like a great afternoon-You may want to start checking at the 5 hour mark. I use the toothpick test for rib "doneness". Insert into the meat and "no resistance" means you are there. Works better for me than the bend test. YMMV-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Done in 6hrs. Not as flavorfull as Duroc, but they were tasty!
