Cornish Hens- Beer Brined

Options
Took two hens brined in beer with salt/sugar combo dusted with Dizzy Pig. Added roasted leaks and squash for a great Sunday dinner.  Never did a beer brine with Hens before but was real good.

  • 'brine' or 'marinade' (as in 'marine') usually means the liquid has enough salt to give a fighting chance of actual penetration by osmosis.  did you taste any beer IN the meat, or do you think it ended up more like a bath, on the outside?

    It was very good. Not too spicy and did real well with the hens. It is becoming a favorite.

    I really did not pick up much except it gave it a bit of flavor.  We used Blue Moon and I swear I picked up a slight citrus taste.  But all was very subtle.
