Baby Back Ribs and the Blues

Got in the mood for ribs yesterday. Had to play some Blues to get it going. Fire lit at 12 noon. Ribs on at 1. 2 chunks of apple and 1 of hickory. Rubbed and wrapped for a few hours beforehand. Steamrolling along at 280*. More to come.

Best ribs yet SWMBO says. I think I let them go a little too long. Somewhat dry to me. First time running them unsauced and uncoiled. Like them this way for sure.
