No Pics, So It Never Happened - But...

I will probably get a 15 yd personal foul, but I didn't get pics tonight. SWMBO and the princess were in a hurry to watch Pretty Little Liars (I know, why? You ask...)
So I had leftover spatchcock chicken breast. I sliced it thinly and warmed it on the egg. Grilled an ear of corn. While the corn was grilling, I cooked 3 jalapeños with cream cheese and bacon for an appetizer. 
Took the grilled corn and cut it off the cob for salsa. Add a few black beans, diced onion and garden tomatoes (2/1 ratio tomato to onion). Add a grilled chopped Serrano, cilantro, garlic, salt & pepper, zest & juice of one lime, a splash of wine vinegar, and some EVOO.
Make a salad of fresh garden mix lettuce, some warmed chicken, salsa, and queso fresco.
After supper we had grilled peaches dusted with sugar and cinnamon and some ice cream (needed Blue Bell).
All in all it was a great simple supper. Too bad there is no evidence to prove it ever happened.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    We were down in Texas for a week last month... I missed not being able to have some Blue Bell!

    ...and then Alton Brown declared it was the best salad he ever had.  The end.

    Jk, it actually sounds great.  I need to start doing more meals like that myself.
