I cooked it at 285 with an entire split of pecan in there. I started it last night at 3am and came home from work and pulled it at lunch. Let it rest till dinner. Brisky looks good! Cooking on a UDS is fun. I cooked on a UDS for some time and still miss the smoked chicken it made. Pretty easy to dial in.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

@Thatgrimguy Good looking brisket, and very cool UDS. I wasn't oblivious to them, but had never really looked at them until your post (now I've spent an hour online checking them out.) Looks like a fun project and I'm thinking I'll make one myself. Please keep us posted on how you like it.
