Did you use the UDS for the brisket?

Nope, finished it up while we ate the brisket.  I still need to build a fire basket.

I cooked it at 285 with an entire split of pecan in there. I started it last night at 3am  and came home from work and pulled it at lunch. Let it rest till dinner. It really needed to ride a little longer, but I was working around sleep and work so I'm pretty darn happy with the results.

Brisky looks good! Cooking on a UDS is fun. I cooked on a UDS for some time and still miss the smoked chicken it made. Pretty easy to dial in.

I wanted some additional capacity and didn't need to buy another xl egg. This should work perfect and so far I have $100 bucks extra in it. the rest I found or already owned.

I screwed down a piece of aluminum flashing to get a lower diameter on the lip so the weber lid would fit. I covered that and the small gap with a nomex gasket I had laying around.

@Thatgrimguy   Good looking brisket, and very cool UDS.  I wasn't oblivious to them, but had never really looked at them until your post (now I've spent an hour online checking them out.)  Looks like a fun project and I'm thinking I'll make one myself.  Please keep us posted on how you like it.
