what kind of knife for slicing brisket
I know I've talked to SGH and Cen-Tex about this but forgot..What is a good knife for the job?

I use an electric knife. It works well for me.

I used the Sani-Safe 12" scalloped roast slicer model: S140-12SC that Aaron Franklin recommended for the first time last week, it worked pretty well. I think it is the same as the Dexter Russell. It is available on Amazon."Bacon tastes gooood, pork chops taste gooood." - Vincent Vega, Pulp Fiction

Brisket is a jiggly lump o' flesh with a crusty bark. You need to slice cut rather than push cut. The serrated is superior in this regard. The Dexter has good value. Is it the best? no. Does AyAyron Franklin use it? Yes. Sufficient for brisket? More than.
