I was very impressed with the quality of the meat. I've never tried sterling silver cuts! Wow! I cooked it at 300 dome for about 10-11 hours! It probed like butter. I made burnt ends for the first time as well...they were a hit. Its tough to find whole packers down here in Miami. Thanks for all your help on this site...couldn't do it without you guys!

Looks great. Restaurant Depot has a location in Miami and they should have packer briskets at a great price. They are on sale up here at RD for $2.95/pound right now.

@smokehouse , Restaurant Depot requires a free membership. They will give you a membership if you run any kind of business (doesn't have to be food oriented). If you have friends that run a business you might be able to use their paperwork to get a membership. You can always join the Kansas City BBQ Society which will get you a free day pass to Restaurant Depot any time you want to go in.
