First time with Short Ribs

Just because it is a beautiful day I grabbed some chuck short ribs at Publix this morning. I'm bored with my chicken/pig/pizza routine and felt like doing something new.

I do these regularly in the winter braised with wine and veggies, but have never tried them on the egg. A quick forum search for techniques and I am off to the races. 

Rubbed with kosher salt and fresh cracked pepper, on at 250 with a little pecan wood for smoke.

They went on about 2 hours ago. I like how this looks so far.....

    Great audible-just go til they probe with no resistance with the toothpick.  As you likely have found you can foil wrap or run neked to the finish line.  Regardless, much better than their pork cousins.  Enjoy!

    Those look great. One of my favorite cooks, but I prefer them uncut. See if your butcher will sell them to you without cutting them.  I buy them at restaurant depot where they come uncut in cryovac.

    These were fantastic. I foiled them for an hour with a soy/mustard glaze, served with mashed potatoes. This was a simple, delicious cook that will be added to the rotation. I don't know why I waited so long to give it a shot.
