My first reverse sear
Tonight was my first attempt at reverse searing. It was my son's birthday. I cooked the steaks at 250 until they were about 115 degrees (Maverick probe on the wish list). I rested the steaks and then seared them for about 90 seconds or so per side. Searing was pretty exciting in that bowl of lava...
The family said these were among the best steaks they've ever had. I'll certainly do these again.
