How do I know when beef short ribs are done?

I'm in the middle of this cook and am following this recipe and realized that it only has time but no temp. Don't want to overcook. Any temp suggestions?

My dog thinks I'm a grilling god. -
I didn't post internal temperatures in that recipe because I didn't take any. In recent cooks, I did check and it was just like brisket - around 200-205 degrees. Definitely use the "probe until tender" method.
Hope they came out good.
