My experience with ribs has been mixed but I was pretty happy with them tonight. I did a Car Wash Mike style cook though a little hotter than he recommended. Key was no wrapping and letting them go long enough to render and pass the bend test. I've also gone overboard in the past with sweet sauces, honey, brown sugar, apple juice when wrapping like you see on competition ribs...way over the top for Saturday dinner ribs. Mixed up photo order as usual.

I did have one rack split when trying the bend test so they were likely over cooked for Competition ribs...but still damn tasty...no sauce necessary.
