Porterhouse - 2, 4, 6, 8 method

Decided to have steaks on the grill tonight. Usually my go to is NY Strips or Delmonico (AKA boneless Rib-Eye). Tonight at the local market the better deal was Porterhouse (Fillet Mignon and NY Strip plus the bone for added flavor). Gave them a quick rub of Weber's Steak & Chop seasoning and fired up the XL BGE. Got the lump nice and hot (about 550 to 600). Then comes the 2, 4, 6, 8 method. Start with 2 minutes on the first side - FLIP - go 2 more minutes on the second side - FLIP/Rotate - 2 more minutes on - FLIP - 2 more minutes. In about 8 minutes of grill time the steaks turned out perfect for me and my family. Nice grill marks and a good sear and pink in the middle. Best steaks that we've eaten in quite some time!!
