Performance Update: I know there was talk about the heat levels in the cabinet. I just finished a 16 hour butt on monday morning and monitored the internal cabinet temps. It never got above 125 degrees on the back wall. I'm comfortable with those temps for most cooks. I will monitor my next pizza cook to see how much higher they may be.

If you don't care about presentation, just spatchcock it and cook raised direct around 400* until breast is 165*.They/Them

Here is an informative (and entertaining) video on spatchcocking a turkey. I have used this method many times successfully. You don't need to buy Fred's rubs - you can use whatever seasoning you like on poultry.
