So tomorrow I am going to try a grilled watermelon salad. Anyone ever done it on the BGE before? I'm taking a small seedless watermelon, cutting it in slices (keeping the rind one). I'll then get my BGE set up to 500 degrees Fahrenheit with my lump charcoal and throw in my ceramic grid. Once temperature is set, throw on my watermelon. I'll flip the watermelon until each side is charred. Once that is done, I'll bring the watermelon inside the house, cut in to cube.
Next, I'll throw in a handful of cut fresh basil and about a cup of feta cheese. Season with black pepper and salt to tasting and voila, a grilled watermelon salad. I'll post pictures tomorrow. Until then, have a safe and happy 4th of July.
