Jerk Chicken Tonight

Had wife's side of the family drop by today unannounced .. so decided to make some Jerk chicken.
Started with a marinade of Spur Tree Jerk marinade and blended it with scallions, thyme, garlic cloves, thyme & browning sauce. Used 2 Publix Greenwise whole chicken cut into pieces and marinated it in a large ziplock bag and set it in the fridge for 4 hours

Got the grill upto 375 indirect and thew in couple of Pimento wood chunks. Used the PSwoo2 to grill raised indirect.

Flipped it once after 30 minutes and after another 30 minutes checked with Thermapen until most pieces registered 165 and above

Took out all the pieces into a tray and threw some scallions to make it pretty :-)

Plated it with rice & peas, tomato cucumber salad & spicy jerk BBQ sauce and washed it down with Appleton Estate 12yr old rum and coconut water .. yum!

Everyone enjoyed it!!!

Yeah .. I have a special needs child and they take care of him when both of us go to work .. so this is nothing in comparison to what they give us. My mother-in-law always mentions my cooks whenever we go out to restaurants and tells me that we are just wasting our money & time eating food at that particular restaurant and she rather have me cook at home on the BGE
