Going Commando

Well, if The Paper of Record says it's good to cook directly on the coals, it must be good to cook directly on the coals. 

Like the Forum doesn't already know this!  Personally, I've yet to try it.  The slideshow pix look awesome -- especially the money shots toward the end.

    I went commando once or twice, but had better luck placing a small CI grid directly on the coals.


    I like their idea of using the Joe for commando. Easier than reaching down into an egg. I want to try it with a normal wood fire in my fire pit though. Could even throw my pizza steel on the coals for a flat top effect. Not commando, but should be entertaining. :)

    Great pics in the slideshow! Love their "rustic" patio!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    On a sorta related note, I have Francis Mallmann's book, Seven Fires - Grilling the Argentine Way, and love some of the things he does there. There is a great deal of grilling over an open fire, though I don't recall seeing any cooks directly on the coals. If you're interested, some pics HERE.

    I like your idea of adding the CI grid and not directly on the coals.  Heck my kid complains about the grill marks already, there is no way he would eat this or SWMBO.  I will stick to the old ways, hot & fast or reverse sear if I have the time.

    That's the great thing about caveman style... no grill marks to complain about and (unless they see you do it) they'll never know!  ;)

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    Use a CI os CS griddle. No grill marks or leopard spotting like you get with Caveman or on a grid. Just straight-across, seared goodness.

    Firs, Obamacare gets upheld (again).  Then, no more bans on gay marriage. Now, the NYT endorses caveman cooking.  

    We may just have to accept the fact that we're headed for a disaster of biblical proportions . . .

    If anyone is interested in Francis Mallmann's open fire cooking methods, I just found this video of a PBS show called The Mind of a Chef. Exec Producer, Bourdain. The host, Chef Ed Lee, travels to a remote island in Argentina to cook with Mallmann. Jamon and eggs, salt encrusted trout, whole chickens, whole lamb on a rack planted next to a fire. A well produced show and, wow, what a beautiful place!! I could live there!

    ... Seven Fires - Grilling the Argentine Way, and love some of the things he does there.
    That's a good book. I've never done the right on the coals thing (intentionally anyway :) ) but a steak cooked over an open fire and a bowl of chimichurri are two of my favorite things.
