Bacon Banana Bread

Did this at the TO Eggfest yesterday...

Blend together -

6 ripe bananas (mashed)
2 cups sour cream
4 eggs
1 1/3 vegetable oil
2 tsp vanilla

Mix -
3 cups sugar
2 1/2 tsp baking soda
1 1/2 tsp salt
4 cups whole wheat flour

Combine the wet and dry ingredients and mix thoroughly. I fried up 1lb. of bacon and crumbled it up. Stir a little over half the bacon into the batter (of course you can use more or less depending on your own taste). Sprinkle whatever bacon is left over on top of the batter once it is in the loaf pans.

Bake at 350* for 45-60 minutes (depending on the size load pan(s) you use)

This recipe was intended for use in "standard" sized loaf pan but, I usually make it in the smaller aluminum loaf pans. It freezes really well

    No pics, but the inside looked like banana bread with little bits of bacon.

    I love it brother of the North. I would eat all 5 pans in one sitting. I can put down sine banna bread. Again, great job :clap:
