I use 00 pizza flour only for my crust now at after trying both 00 only and 00 mixed with bread flour. Tasted better too. I cook with PS legs down grid, 3" raised grid and then the pizza stone at 450 to 500. Pizzas cook in about 8 to 10 minutes. I use parchment paper to transfer and pull it out when I turn pizza a quarter turn.
