I like it Matt. Thanks for sharing. I've started to use a Piedmont style sauce every time I make a pork butt. Midwestern people look at the "sauce" and doubt me until they try it.L x2, M, S, Mini and a Blackstone 36. She says I have enough now....eggAddict from MN!

Interesting. I admit that I always described the Lexington style as tomato based. And without using them internets to verify I describe SC BBQ as mustard based. Maybe I am wrong on that one too.

I like how the author keeps referencing "pulled pork" too in her article. Let's be clear that there isn't pulled pork in any of the legacy places whether you're in Eastern or Lexington. You get chopped Q (or some other variants like coarse chopped, sliced, etc).
Remember when my in-laws first came down and I fixed some BBQ. They were telling my brother how they liked the "pulled pork". My brother said "Pulled pork, what is that?". Lol... The look on their face was priceless.------------------------------

Eastern is the only kind worth mentioning. B's BBQ in Greenville, NC and Skylight Inn in Ayden, NC are the only places aside from home that are worth getting out of bed for.

I had no idea there was one let alone two styles of NC Q until reading this (Thx for sharing). I may show Q ignorance but, I'm not privy to NC Q ways or techniques. Maybe I am and just don't realize it. I simply cook and make what tastes good to me and others. The story is pretty spot on. It's a touchy subject in the areas. Gets just as heated as which blue team to do you pull for. I have said it before and will again that I am proud to be from Lexington and the tradition that the BBQ holds. I would say it's well known because of the BBQ Festival held every October. Only about 200,000 people come for this festival.------------------------------
