    I do not pound them unless they are real uneven. More often than not, it isn't necessary.

    Thus far, as I said above I have yet to pound any entirely flat. May try it just to compare. I have had some that had a excessively thick area and I will just mash it out a little with the butt of a thick handled knife. But if you chose to flatten them it shouldn't hurt a think. Here is the knife butt that I use instead of a hammer. I use it because I don't have a tenderizing hammer and it's always in arms reach.
