I saw this beauty today at the butcher shop and couldn't leave without it. I'm going to go reverse sear at 250 with a few Jack Daniels chunks, then hit it with a garlic shallot butter and some caramelized onions after the sear.

Here is the sear and the finished product. It was phenomenal. After slicing I spread some garlic shallot butter on the steak and topped with caramelized onions. The steak was served with beans and a pepper medley.
Something tells me I'll be doing this cook again sometime soon.

Brother chilly, this is what I like to see. Big chunks of Grade A beef. It just doesn't get much better than that. Awesome job.

That steak looks amazing. I'm in the same boat as yolks above. My butcher is at SamsHenderson TN. 1 large BGE, 1 Webber Gasser (recently seems to have converted into a warming oven)

Hmmmm the bumping of this thread just reminded me of how good this cook turned out. I may need to do this again soon. Maybe figure out a good board sauce to use this time.
