Blue cheese and cranberry stuffed pork chops, grilled salad and backed apples.

Well, the butcher didn't have any bone in chops, so I wound up with these boneless. Butterflied and suffer with blue cheese crumbles and dried cranberries. Stitched together with tooth picks. On the egg 300 ish indirect sitting up like tacos to preserve the cheese. Meantime, apples sliced crosswise, baked in lots of butter cinnamon and sugar for about 45 min n the CI. When the chops hit about 130, pulled the PS and put a sear on about 2 min/side. Until 138-140. 

Afterward, threw on some colored bells, cherry tomatoes and romaine. Served with Asiago and red wine vinegar. Just a cople of minutes at 450 for some warm charred goodness.
