Easter Dinner Today...

Having Easter dinner later with my mom coming over...
Double smoking a boneless brown sugar cured ham, and doing some bacon wrapped asparagus for a side. I made the cilantro potato salad last night, think it turned out pretty good
Going to be doing 4lbs of green lightning shrimp tomorrow morning... Thinking of putting them in the marinade this afternoon and then egging them tomorrow around 11AM. Do you think that is too long to have them in the marinade?

depends on what is in the marinade... if it has lots of acids, you could end up with civeche. Most civeche is done in 30 minutes or less and any longer than that it is considered "over-cooked".
