My Best Wings Yet

Wanted wings tonight so I pulled a dozen out of the freezer and in the fridge last night.
I was lazy so I didn't split and trim them. I wanted to finish up some rubs, so I dumped in some Montreal Chicken, Meadow Creek BBQ, and Chinese 5 Spice Powder. Hung them in a leg/wing rack and on the XL raised direct 275* with 2 pecan chunks. With the rack and the raised grid these were nice and close to the dome.



I checked them at 1:45 and they weren't quite done, so I bumped the temp to 400* and 15 minutes later I had this:




I was planning on saucing some with Hoisin and the others with General Tso's, but again, got lazy. I'm glad I didn't. This was some of the crispiest skin yet on my wings. They dried in the fridge for just 4 hours or so this afternoon. 

Now I'm back by the fire with some Jack and Coke Zero. However, now I have a jacket on.

    Nice looking wings @DMW. Where did you get the wing rack?  I have only done raised direct. You like this better than directly on the grid?

    @DMW nice looking wings man. Does starting them low with the pecan give them a good smoke flavor? I've been doing mine just in the 400 range so didn't bother with wood. Also, you've got green stuff in your back yard now!

    Its a Bayou Classic Leg and Wing rack, got it from Amazon. And yes, I think wings and drumsticks cook more evenly hanging like this than laying flat.

    Thanks! Yes, the sweet smokey pecan flavor came through nicely. I think the 275* rendered the fat nicely, which allowed the skin to crisp up.

    And yes, green stuff is there! Its greenest right around the fire pit. I guess the warmth of the fire a few days ago woke the grass from it's winter nap.

    I like that firepit, where'd you get that?  We have a cast iron chimenea that has served us well, but it's about ready to fall apart.

    I got the firepit at Meadow Creek BBQ in New Holland, PA. 
    The brand was "Valley View". However I have not been able to find much of anything about them. This is a 30", they also had a 24". Very well made and reasonable. I think my 30" with cooking grid was $350 or so. 

    In the limited googling I did I found a dealer in Ohio that has them. I'm guessing they are Amish made from Ohio. My reasoning is Meadow Creek is Amish and would have Ohio connections. No idea if this is accurate or not...

    We do have neighbors on each side of us, just not out the back.

    Maybe I can see if they would complain or not, need to talk to the wife about this once it gets warmer. :smiley:

    Outstanding wings buddy.  I'm with Gregg on that fire pit. 
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    @theyolksonyou I need all that stuff plus the view he's got. Unreal. If I look out my back window I see a neighbor who looks like @henapple doing questionable things.

    Nice wings.  Yeah, I also noticed the firepit, very nice.   I made mine with 1/8" steel.  Some issues with warping, next one will be 1/4" cor-ten.

    Great looking wings!! Funny thing...I've got two of those hanging racks and I've yet to use them for wings. Legs? Yes. Wings? No. I may try it this week as I've already got the wings in the fridge ready to go. And great view. I hate you. ;)

  • Never racked the wings. Usually it's load up the upper deck and keep flipping. Time to try the DMW method!
    It's a 302 thing . . .
