All the Cool Kids Are Doing Em (Sunday Short Ribs)
I was at Costco yesterday and came across a package of boneless beef short ribs. I figured that I'm always late to the party, so why not? Rubbed them up with Oakridge's Black Ops Brisket Rub, and just put them on with a full load of Rockwood and some pecan chunks for smoke.

These turned out really well. I pulled 3 after 6 hours and probing smooth, 2 others were a bit larger and I left them on for another 25-35 minutes. Served with beans and salad:

Those look great.
My story: I've cooked those boneless short ribs six ways to Sunday and they were cooked perfectly (almost) every time. I eventually concluded I don't like the cut.______________________________________________I love lamp.. -
Thanks all, they did turn out really well. I was shocked, my wife admitted that she might like them more this way than braised. I had fully expected her to say something like "They're pretty good, but the next time we get those we'll be cooking them in red wine."
