Planning to try an injection but need some tips - Boston Butt

Normally I rub with some Dizzy Pig the day before, throw it on the next day with some hickory or mesquite chucks and let it cook until it is done.  And it is always really good and doesn't disappoint.

I've laughed to myself when I hear that people spend the extra time to inject their butt because I've always thought that mine was flavorful and moist - it just seemed so excessive.

Now I've decided that I shouldn't pass judgement on what I prefer unless I try injecting one myself.  So my thoughts are:

I've used the Crown Royal Maple in Egret's ham and everybody loved it so I want to try the Crown Royal Apple for the butt.  I was going to stick with my Dizzy Pig rub and use Chris Lilly's injection recipe:

3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire

I'm not sure if the whiskey should replace anything or just add some to it.  Should I make it like above and add the whiskey until the taste is right?

What do you guys think?

No comment on the injection, but when you inject, wrap the target meat in a plastic wrap first then inject thru the wrap.  Clean-up is much easier-learned the hard way.

I didn't wrap and to say things got messy was an understatement.

dont inject on the counter, wait til the butt is 170 plus internal and inject it in the egg. you get a fresher flavor profile and zero mess and more of the injection stays in

  • So I mixed the injection ingredients together and it tasted terrible. I wasn't going to put that anywhere near my Boston butt. Before giving up, I said I'm going to skip the worcheshire and salt. Apple juice, crown royal apple, Jack daniels honey and a little bit of sugar. Added some water to dilute it and it actually tasted okay.

I waited until it hit 170 before I injected it. Now I'm waiting for it to finish up. I'll post the result tonight.
